Periodic cleanup of IP addresses

Even with includeIpAddress: false the field @submission_client.ip_address is still recorded in elasticsearch.

I assume this is used for client throttling. This information should be periodically removed to be able to adhere to data policies.

Thanks for reaching out to us! We use this for throttling and geo lookup when we process the event. Would you mind submitting a pr that tweaks or adds a new pipeline plugin to remove this information based on the project / org setting. We don't want to have any jobs go and cleanup data as we now treat events as 100% immutable.
